Family-Friendly Tiramisu
 
Ingredients
  • 2 cups boiling water
  • 2 tablespoons instant coffee or espresso (I used decaffeinated)
  • 2 tablespoons sugar
  • 8 oz reduced-fat cream cheese
  • ¼ cup sugar
  • ¼ cup low-fat milk
  • 1 teaspoon vanilla extract
  • ¼ cup whipping cream
  • about 30 ladyfingers or how many will fit in your dish
  • ¼ cup cocoa powder
Instructions
  1. Combine hot water, coffee and 2 tablespoons sugar. Set aside. Using a hand mixer or stand mixer, combine cream cheese and ¼ cup sugar until fluffy. Add milk and vanilla extract until combined. Set aside. In a separate bowl, beat whipping cream until soft peaks form when beaters lifted. Fold whipping cream into cream cheese mixture. Dip ladyfingers in coffee mixture for a few seconds and then arrange in an 8x8 inch dish. Add half of cream mixture and spread across ladyfingers. Repeat with the remaining ladyfingers and remaining cream mixture. Sift cocoa on top and refrigerate for at least a few hours.
