Easy Pumpkin Apple Crisp

I love a good fruit crisp in the fall but typically fruit crisp recipes are full of sugar and butter.  The kids and I set out to make a delicious but healthier version of apple crisp with a fall twist.  So we added pumpkin.  Does anything say fall more than pumpkin?  The results were amazing.  And the ingredients are so clean that I would gladly let my kids have this for dessert any night or even breakfast!  They loved the spiced apples alone, but the pumpkin topping really takes it up a notch!

My son helped me make this one start to finish.  I peeled a bag of apples and he chopped them using his favorite knife.  He was so proud of his chopping.

Next we added some spices to the apples and then made an oat topping by combining oats, flour, salt, coconut oil, syrup and pumpkin.

When my kids help in the kitchen they love more than anything when they can really use their hands.  When I told my son he could use his hands to drop the oat topping on top of the apples he was quite happy.

Let that cook for a half hour and your house will be filled with the delicious smell of apples and pumpkin.  Maybe it’s a little too early to start planning your Thanksgiving menu, but promise me this will be on it.  It’s light, clean and delicious!

Ingredients

  • 3 lb bag of apples, we used Gala
  • 1 teaspoon pumpkin pie spice
  • 1.5 teaspoon cinnamon
  • juice of half a lemon
  • 1 cup old fashioned oats
  • 1/2 cup flour
  • 1/2 teaspoon salt
  • 1/4 cup melted coconut oil
  • 1/4 cup maple syrup
  • 2 tablespoons pumpkin puree
  • optional: vanilla ice cream

Instructions

  1. Preheat oven to 350. Toss apples with pumpkin pie spice, 1 teaspoon cinnamon and lemon. Spoon into a greased 8x8 inch pan. In another bowl whisk together oats, flour, 1/2 teaspoon cinnamon and salt. Add coconut oil, syrup and pumpkin. Stir to combine. Drop by spoonfuls on top of apples. Bake for 30 minutes. Top with vanilla ice cream.

    Oh, this looks divine! Love all the photos. Mostly I love that your son is cooking -- my son (now 12) has been cooking since he was very young and now cooks dinner for me nearly every night. It's an amazing skill to pass on to our children. Thank you for the recipe!
