Last fall I co-founded a farmers market with two amazing women who have become dear friends. We had such a successful fall season that we decided to run a short six-week spring market. Our area at the Jersey shore is a summer destination so we have an abundance of summer markets. Our market was created to fill the void in spring and fall (and possibly winter soon) for people who live at the shore all year round and desire locally grown produce and locally produced food. When we were planning the spring market and thinking about possible new vendors, I felt very strongly that we needed a pickle vendor. I searched and searched until finally I came upon Preservation Handcrafted Foods. They agreed to be part of our market and we couldn’t be happier. Our market is on Saturdays and each Monday at school drop-off I hear from people raving about the pickle vendor! At our last market I picked up a jar of garlic and dill pickles because the kids wanted to make this dill pickle dip. We made it on Mother’s Day (hence the fancy tie my son insisted on wearing) and it was a perfect appetizer while my husband prepared his annual Mother’s Day dinner. If you are entertaining this summer, dill pickle dip will be a crowd pleaser!
Start with about six slices of your favorite pickles. Pickles are fun to make but if you don’t have time, pick some up at your local farmers market or grocery store. My son chopped them with his favorite knife and then we set them aside.
In a large bowl mix together cream cheese, Greek yogurt, pickle juice and chopped dill.
After you are done mixing, stir in the chopped pickles and season with salt and pepper. Serve it with pita chips and your favorite veggies for an appetizer everyone will love.
Ingredients
- 8 oz block cream cheese, softened
- 1/2 cup Greek yogurt
- 2 tablespoons pickle juice
- 1 tablespoon chopped dill
- 1 cup chopped pickles
- salt and pepper to taste
Instructions
- Combine cream cheese through pickle juice using a hand blender or food processor. Stir in pickles. Season to taste. Serve with chips or vegetables.
