Last week at our local farmers market my kids asked if they could get fresh juice. I gave them money and they each came back with a red cup full of beautiful beet juice. Someone commented to me that mine are the only kids who would actually choose beet juice. That makes this mama proud! Since my kids love beets we decided to make a fun summer treat with them. They love anything frozen so we got creative and came up with a simple and delicious recipe for chocolate beet ice pops.
You start by boiling a small beet that has been cut up. Want to skip this step? I’ve seen cooked beets sold in the produce section of the supermarket or you can also buy canned beets.
Let the beets cool and add them to the bowl of a food processor along with a pudding packet and milk. While we like to make vanilla pudding from scratch, sometimes you want a shortcut. This is the brand we like (this post is NOT sponsored).
Once that is well-blended pour the mixture into your ice pop molds.
The kids asked every five minutes if they were done yet (sound familiar?). It was well worth the wait. These ice pops are delicious, colorful and with beets, you can feel good about giving them to your kids as a treat!
Ingredients
- 1 small beet, peeled and chopped into 1-inch pieces
- 1 packet chocolate pudding mix
- 2 cups milk
Instructions
- Boil chopped beets for about 45 minutes, until soft. Let beets cool. Combine beets, pudding mix and milk in a blender or food processor. Pour into ice pop molds. Freeze until set.
